Fortezza Ristorante brings the romance of Northern Italy to Niwot

Pressing your way into downtown Boulder for chef-inspired fine dining, often fighting traffic and hunting for parking, can make a special night out feel like a commute. Heading out of the city through the open farmland around Niwot to dine at an establishment of the same caliber, however, feels instead like an escape from the everyday and a romantic adventure.

Nestled beneath 150-year-old cottonwood trees and built on local roots, Fortezza Ristorante is that delicious destination restaurant, offering an innovative and farm-fresh menu inspired by Northern Italy only 20 minutes north of Boulder. 

“Niwot is this little oasis in many ways, close to the city but with these amazing agricultural areas and farms next door,” says Adam Moore, who has decades-long ties to Northern Colorado and owns Fortezza with his wife, Natalie Moore. “Being able to embrace and live off the land, that’s very Niwot, but that’s also very Northern Italy, where you often drive off the beaten path to find a gem of a restaurant with charm and maybe some lore attached to it.”

Having recently celebrated its first anniversary, Fortezza’s lore is still developing but already impressive. In his long career in fine dining, Adam most recently spent 10 years managing the storied Barolo Grill, while executive chef Egan Ma and sous chef Dylan Rigolini come from Id Est Hospitality, the group behind Basta, Bruto, and Hey Kiddo. 

The restaurant’s charm, on the other hand, is undeniable. A remodel added cushioned seating in the cozy dining room, where you can look out at the garden patio, hear martinis shaking from the stylish bar, and watch Fortezza’s servers dance between tables carrying various delights. 

Such delights range from beloved Italian classics, like the crisp-tender focaccia baked in-house each morning, to the playful and truly unique, such as the panissa with Parmigiano-Reggiano espuma. The latter consists of a fritter of silky-smooth chickpeas covered in a Parmesan foam, the cheese transmuted into an airy, savory frosting. Like all the dishes on Fortezza’s five-part menu, both dishes taste luxurious and are meant to be shared, increasing the intimacy of the dining experience. 

“This is not Americanized Italian,” Adam says, referring to the heavily cheesed, breaded, and oversized dishes often associated with Italian American cuisine. “We try to uniquely and authentically reflect what you would see on a Northern Italian menu today, offering the best ingredients prepared by the best talents, adding nothing unnecessary.”

The freshness of those ingredients is outstanding, as much is made in-house, including the creamy ricotta featured on the three-cheese plate and all of Fortezza’s pastas. While those pasta offerings change seasonally, the menu staple, tagliatelle al ragù d’anatra, perhaps best represents the restaurant’s innovation within authenticity, topping tender fresh noodles with a traditional pork ragu spiked with duck confit and fermented Fresno pepper. The result is sumptuous, subtly spiced, and stunning. 

Other ingredients come from only a short drive away, such as the American wagyu sourced from Colorado’s Callicrate Beef and served bistecca style, meaning grilled over binchotan charcoal. Dry-aged, cooked to perfection, and served sliced for sharing, steaks are a house specialty, though the king salmon with creme fraiche, dill-taragon gremolata, and smoked trout roe proves the kitchen can handle seafood with equal aplomb. Either would make a fitting apex of a personalized tasting menu you create with your date or dining companions.

“That’s where our staff really shines through, with their knowledge, warmth, and genuine sense of hospitality,” Adam says, who, along with co-owner Natalie, is often on-site providing hands-on hospitality, offering wine recommendations, and generally embodying the mom-and-pop charm for which Niwot is known. “Truly, we’re aiming for the restaurant to be special for every person, for any occasion, whether that’s an upscale happy hour, a romantic date night, or a celebration in our private dining room.”
