Kale & Apple Salad

Recipe courtesy The Kitchen and Next Door cofounder ­Kimbal Musk DRESSING INGREDIENTS ½ cup apple cider vinegar ¾ cup canola oil ¾ cup xanthan gum ½ cup apple juice ½ teaspoon honey 1 teaspoon Dijon mustard 1 teaspoon garlic, finely chopped 2 tablespoons yellow onion, chopped SALAD INGREDIENTS (per serving) ½ cup baby kale, chopped 1/3 cup Granny Smith apples, thinly sliced ½ teaspoon sunflower seeds 2 tablespoons goat-milk feta cheese, crumbled 1 teaspoon fresh parsley, minced Salt and pepper, to taste DIRECTIONS Whisk dressing ingredients in a bowl and set aside. Toss salad ingredients in individual salad bowls. Pour desired amount of dressing over each salad (about 2-4 tablespoons per serving) and toss to combine.
